Cowboy Caviar (aka: Texas Caviar)
2 cans (15 oz.) black-eyed peas, drained
1 can (14 oz.) diced tomatoes
1 can (15.25 oz.) can whole kernel corn, drained
1 small red onion, chopped
1 green bell pepper, chopped
¼ to ½ cup chopped, pickled jalapeno peppers or to taste
¾ cup chopped, fresh cilantro
Bottled Italian salad dressing
1 lime, juiced
In a large bowl, combine the peas, tomatoes, corn, onion, bell pepper, jalapeno peppers, and cilantro. Once mixed, add the lime juice and Italian dressing to taste. Toss to coat, place in refrigerator and allow to marinate for at least an hour before serving with tortilla chips.
