For the Salmon:
4 Salmon fillets, with the skin on
4 teaspoons olive oil
non-stick cooking spray
1 lemon, juiced
1 tablespoon Italian seasoning
1 teaspoon salt
½ teaspoon freshly ground black pepper
For the Garlic Herb Butter:
½ cup unsalted butter, softened at room temperature
2 teaspoons minced garlic
1 teaspoon fresh parsley, chopped
For the grilled Salmon:
Place the Salmon fillets on a large dish and squeeze the lemon juice on top and around the Salmon fillets.
Season the Salmon with the salt, pepper and Italian seasoning, making sure to rub the seasonings into the Salmon on both sides.
Allow the Salmon to rest and marinate for 10-15 minutes.
Brush the olive oil on both sides of the Salmon.
Preheat the grill to 400 degrees F and liberally apply cooking spray to the grill grates to prevent sticking.
Place the Salmon on the grill, skin side down.
Close the lid and cook the Salmon for 14-20 minutes until it flakes with a fork.
Remove Salmon from heat and spread the butter mixture over the top and enjoy.
Pairs nicely with some roasted or steamed vegetables and a salad.
For the garlic herb butter:
Combine the butter, garlic and parsley in a small bowl.
Blend until smooth.
